Becky's NY Cheesecake (Paula Deen)

We LOVE cheesecake!  This one has cream cheese AND chocolate AND berries...mmmm!  You'll have to try this one.  We did.  Becky made this to share at our Wednesday night Bible study.  I think we have a little competition going on there.  LOL!!  It's one of the most delicious kind!

Ingredients:

Crust:

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 7 tablespoons butter, melted
 

Filling:

  • 12 ounces cream cheese, softened
  • 1 cup sugar
  • 1/2 teaspoon vanilla extract
  • 3 eggs
  • Chocolate glaze, for serving, recipe follows
  • Cherries, for serving
  • Whipped cream and/or powdered sugar, for serving

Directions:  Preheat oven to 350 degrees F.

Crust:  In a medium size bowl, combine the graham cracker crumbs with the sugar and butter. Mix well and place in the bottom and sides of an 8-inch springform cake pan. Make sure to press against the sides and bottom of the pan. Place into oven and bake for 8 minutes. Let cool.

Filling:  Prepare the filling by beating cream cheese. Mix in sugar and vanilla while beating until well blended. Add in eggs and combine. Pour mixture into prepared crust. Place on a cookie sheet and bake for 45 minutes. Remove from oven and let cool to room temperature. Refrigerate overnight.

When ready to serve, top with chocolate glaze, cherries, whipped cream and or powdered sugar.Becky's NY Cheesecake (recipe by Paula Deen)

Chocolate Glaze:

  • 1/4 cup butter
  • 2 (1-ounce) squares semisweet chocolate
  • 3/4 cup sugar
  • 1/2 cup heavy whipping cream
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt

In a medium saucepan melt butter over medium-low heat. Add chocolate to the butter. Whisk in sugar, whipping cream, cocoa powder, vanilla, and salt. Whisk until combined. Cook over medium-low heat for 2 minutes while whisking constantly.

Yield: 10 to 12 servings

  • I found these neat little tart pans in the children's cooking section of our local "Mom & Pop" grocery store.  I knew exactly what I could use them for.  I used the tart recipe below for a little more sweetness and combined it with my apple pie filling. It is wonderful and gets made as often as I have extra apples!

  • This apple pie has been "in the making" for many, many years now.  I've learned this from one person and that from another.  I picked up this little tidbit (about pie making) from this website and read about that little tidbit in a cookbook.  I can tell you that it's almost perfect!  (Nothing is absolute, since tastes are different.)  If you want to try and prove me wrong, take this recipe for a test drive yourself!  I played with the idea of keeping it as "my family's secret recipe", but didn't want to deprive anyone this wonderful experience.

  • One of my daughter's got a Paula Deen cookbook for Christmas.  This cake was served to us by a friend though.  When we realized that we already had the recipe for it, we made haste to try it out for ourselves.  One tiny adjustment to the recipe (the flavor of pudding) and it is a great big hit!  Our family loves this!
