Stuffed Shells PDF Print E-mail

This is one of our favorites and usually served when we have company for the first time.  It fills up alot of people and is very yummy!  I was raised on my mother's awesome lasagna, so this is my own tweaked version of that particular pasta and sauce combination.  Enjoy!

  • 1 pkg. jumbo pasta shells
  • 1 lb. ground beef
  • 1 can spaghetti sauce (your favorite)
  • 32 oz. container ricotta cheese
  • 1 ½ C mozzarella cheese, shredded, divided
  • 2 medium eggs
  • salt & pepper (to taste)
  • 1/3 C Parmesan cheese, grated 
  • parsley flakes

Directions: 

Preheat oven to 375°.

Cook and drain pasta according to package instructions. 

Brown ground beef in skillet.  Mix it with the spaghetti sauce and keep on warm while you're putting together the cheese mixture.

 Reserve ½ C shredded mozzarella cheese for top of shells.

 Mix in large bowl the ricotta, mozzarella & Parmesan cheeses with the eggs, salt & pepper & parsley flakes.

Spoon or pipe cheese mixture into cooked shells.  Place in deep baking dish.  Spread sauce over top of shells, then sprinkle cheese over that.

Bake for about 35 minutes.  Let stand about 5 to10 minutes.

Serves up great with Italian or French bread!

  • I happen to like the Weight Watchers meals that are offered in the grocery store.  My favorite is the enchiladas suiza.  I make my own version quite often.  My husband and I have both commented that our moms never made them.  When I questioned my mom, she said her mom never made them for her, so she didn't know how.   • I like to 'throw stuff together' to make a meal.  I am famous for using whatever I have on hand and coming up with a new recipe.  When the kids ask for the same meal (or my husband) three or more times...I will put it on the site.  This is one of those. My kids love it when this happens because they get to 'name it'.

  • Can we say "Comfort Food"?  We LOVE chili.  I have my own recipe that I've developed over the years.  There was a man at our church in New York that liked my chili so much, he'd get bold and come right out and ask me to make him some.  He was in his 90's and I was so flattered that I was happy to oblige.  Hope you like it as much as Bob did!

  • I found this recipe on a website called Sugar Pie Farmhouse.  At the time, I had just received a new cast iron skillet and was looking for some good recipes to try it out on.  I am so glad I stumbled onto this one!  You can make the whole meal right in your 12-inch skillet and it fed my whole family of 6!  It's delicious!
