Steph's Macaroni & Cheese PDF Print E-mail
Macaroni & CheeseThis is Stephanie's favorite.  It was placed on this page at her request. "Hi Stephanie!"  (Mom's way of ensuring that she looks at the website once in awhile.)

 Ingredients:

  •  1 lb. pasta (shells or elbows)
  • 4 oz. mild cheddar cheese (shredded)
  • 4 oz. mozzarella cheese (shredded)
  • 4 oz. parmesan cheese (shredded)
  •  milk (about an inch in bottom of sauce pan)
  • 2 TBS. butter
  • salt & pepper to taste
  • paprika 
  • 2 TBS. cornstartch (w/just enough (very cold) water to create  smooth consistency.)

Directions:

  Cook pasta according to directions on box. Meanwhile cook about an inch of milk (whole milk works best) in saucepan on medium heat with butter, salt & pepper. When butter has almost melted completely, add cheese.  When cheese has melted, reduce heat to low and add corstarch/water mixture to thicken. Combine pasta and cheese sauce.  Put in baking pan.  Top with shredded cheese and paprika.  Broil for about 3 minutes or until cheese browns. 

This is our family favorite.  It's pretty simple and always a hit! Sometimes we add fried, sliced hot dogs into the cheese sauce for a little more flavor.

  • I happen to like the Weight Watchers meals that are offered in the grocery store.  My favorite is the enchiladas suiza.  I make my own version quite often.  My husband and I have both commented that our moms never made them.  When I questioned my mom, she said her mom never made them for her, so she didn't know how.   • I like to 'throw stuff together' to make a meal.  I am famous for using whatever I have on hand and coming up with a new recipe.  When the kids ask for the same meal (or my husband) three or more times...I will put it on the site.  This is one of those. My kids love it when this happens because they get to 'name it'.

  • Can we say "Comfort Food"?  We LOVE chili.  I have my own recipe that I've developed over the years.  There was a man at our church in New York that liked my chili so much, he'd get bold and come right out and ask me to make him some.  He was in his 90's and I was so flattered that I was happy to oblige.  Hope you like it as much as Bob did!

  • I found this recipe on a website called Sugar Pie Farmhouse.  At the time, I had just received a new cast iron skillet and was looking for some good recipes to try it out on.  I am so glad I stumbled onto this one!  You can make the whole meal right in your 12-inch skillet and it fed my whole family of 6!  It's delicious!
