I made this one for my daughter's 9th birthday. She flips through the Better Homes and Gardens catalog on a regular basis, just to make sure I try new things every once in a while. It's a keeper!
Ingredients:
Cake:
Peanut Butter Layer:
- 2 large eggs
- ¾ C creamy peanut butter
- 1 ¼ C granulated sugar
- ¼ C unsalted butter, softened
- ¾ C all-purpose flour
- ¼ tsp. vanilla extract
- 6 TBS. unsalted butter, melted
- ¾ C. powdered sugar
- 3 oz. unsweetened baking chocolate
Ganache:
- ½ tsp. vanilla extract
- 2 C semi-sweet chocolate morsels
- ¹⁄8 tsp. salt
- 1 C heavy whipping cream
- ¹⁄3 C peanut butter & milk chocolate morsels
Directions:
Preheat oven to 350°. Grease 9" round cake pan. Line bottom of pan with parchment paper; grease.
For Cake:
Combine eggs and sugar in large bowl. Stir in flour, melted butter, baking chocolate, vanilla extract and salt until smooth. Pour into prepared pan. Bake for 25 minutes or until a wooden pick inserted in the middle comes out clean. Cool on wire rack for 5 minutes. Run knife around edge of cake; cool for an additional 10 minutes. Invert cake onto serving platter. Remove parchment; cool completely.
For Peanut Butter Layer:
Beat peanut butter, butter and vanilla extract in medium mixer bowl until combined. Gradually beat in powdered sugar. Spread mixture on cake. Refrigerate for 30 minutes.
For Ganache:
Heat cream in small saucepan to boiling; remove from heat. Add semi-sweet morsels; let stand 5 minutes. Stir; refrigerate for ½ hour or until mixture is spreadable. Spread chocolate on top and sides of cake.
Melt peanut butter and milk chocolate morsels in resealable plastic bag on 70% power for 30 seconds. Knead bag to mix. If necessary, microwave at additional 10 to 15 second intervals until melted. Cut a small hole from corner of bag; squeeze to drizzle over cake. Store in refrigerator. Let stand for 30 minutes before serving. (Makes 8 servings)
*Note: Recipe says it makes 8 servings, but you may want to cut in smaller pieces as it is VERY rich...and delicious!

True to my nature, I also have a great apple pie recipe! I have gleaned wisdom from many people and made my own combination. This apple pie is filling, crunchy and soft all at the same time. The crust is the best part. I just know you're going to love it!

I found these neat little tart pans in the children's cooking section of our local "Mom & Pop" grocery store. I knew exactly what I could use them for. I used the tart recipe below for a little more sweetness and combined it with my apple pie filling. It is wonderful and gets made as often as I have extra apples!

Everybody needs a good chocolate chip cookie recipe! Here's one that's soft (thanks to the ½ tsp. of cold water), but crispy around the edges (if you use real butter). It's been tested by the most scrutinizing pallettes!

This apple pie has been "in the making" for many, many years now. I've learned this from one person and that from another. I picked up this little tidbit (about pie making) from this website and read about that little tidbit in a cookbook. I can tell you that it's almost perfect! (Nothing is absolute, since tastes are different.) If you want to try and prove me wrong, take this recipe for a test drive yourself! I played with the idea of keeping it as "my family's secret recipe", but didn't want to deprive anyone this wonderful experience.

One of my daughter's got a Paula Deen cookbook for Christmas. This cake was served to us by a friend though. When we realized that we already had the recipe for it, we made haste to try it out for ourselves. One tiny adjustment to the recipe (the flavor of pudding) and it is a great big hit! Our family loves this!
